The Cola Estate was
inaugurated in 1985 when it replanted its vines on the slopes of Mount
Alto in Adro. Today, the Estate's vineyards stretch to Cortefranca in
the Franciacorta sparkling wine region. Nothing is left to chance: the
cellars maintain a constant temperature and humidity control and only
specially selected yeasts, perfected after years of trials and
experimentation, are used in the winemaking process. The sparkling
wines produced by the Estate have, since the very beginning, been made
according to traditional winemaking and ageing methods with the use of
modern technology. The experience matured over the years, and a close
collaboration with agronomist Giacomo Gruppetti and oenologists Alberto
Musatti and Massimo Gigola, have supported the work of Stefano and
founder of the Estate, Battista. The grapes are meticulously hand
picked, the vinification of single varietals is aided by yeasts that
have been chosen with care, and fermentation is at the controlled
temperature of between 18-20°c in order to produce wines that are made
according to the traditional Franciacorta production method. The
results: outstanding wines with exceptional bouquets.
